Friday Special: Make delicious Paneer Tikka Masala at home – Dainik Savera Times


Material:

Marination Ingredients:

350 grams. Paneer (1 cup thick pieces of cheese)
1 small onion, chopped
1 medium green capsicum, cubed
1 cup whipped curd
1 teaspoon crushed garlic
1 teaspoon crushed ginger
1 teaspoon kasturi methi/dry fenugreek leaves
1 tbsp homemade tandoori masala
1 teaspoon garam masala powder (optional)
1/4 teaspoon nutmeg powder
salt to taste
1 tbsp butter/ghee/oil (for baking or cooking)

Gravy Ingredients:

2 small onions, grind and make a paste
2 small tomatoes, grind and make paste
1 teaspoon each ginger and garlic paste
1 tbsp cashew paste
2 tbsp whipped curd
1 tbsp butter/oil (optional)
1/2 teaspoon cumin
1.5 tsp dry coriander powder
1.5 tbsp homemade tandoori masala
1/2 teaspoon red chili powder
2 teaspoons Kasoori Methi/dry fenugreek leaves
salt to taste
1 tbsp oil
1 tbsp cream (optional)

Method:

1. Let’s start with our marinade ingredients.

2. Clean the cheese pieces and cube them.

3. Wash and clean the vegetables. Cut them into pieces.

4. Soak the wooden skewers in water for 30-40 minutes. Preheat oven to 350 degrees F.

5. Meanwhile, beat the curd in a large bowl and make it smooth without lumps. Add crushed ginger-garlic paste to it…

6. Add kasturi methi, tandoori masala, nutmeg powder and salt. Beat and mix until all the spices are well combined.

7. Add the cubed paneer and vegetables to the marinade and rub the marinade all over the paneer and coat well. Marinate it for 2-3 hours.

8. After the marination time, place the cheese and vegetables on the skewers, alternating the pieces of vegetables and cheese.

9. Place the skewers on a wire rack and place a tray beneath the skewers.

10. Place them in preheated oven and bake for 20-30 minutes or…

11. Cook until brown on both sides, turning occasionally.

12. Once grilled, let them cool completely.

13. Remove them from the skewers..

14. If you like small pieces of paneer in the gravy, then cut them into small pieces or leave them as is.

Preparing the Masala:

1. Gather the ingredients for the gravy and spices.

2. Heat oil in a pan, add cumin seeds and when cumin seeds start crackling, add ginger garlic paste and fry for a minute. Add onion paste…

3. And cook until all the liquid evaporates and the masala reduces to half (4 minutes). Mix in tomato puree..

4. Add all the spices, curd and cashew paste and mix. Mix and fry on medium flame for 5-6 minutes.

5. Add butter and cook for 4-6 minutes.

6. When oil/butter separates from the spices, add 1/4 cup water to it. Add water as per your choice, if you like thick gravy then add less water.

7. Boil it (2 minutes) and adjust the seasoning

8. Add the cream and mix until well combined.

9. Add kasturi methi or chopped coriander and mix.

10. Add grilled onions and capsicum/capsicum along with grilled cheese pieces.

11. Mix and remove the pan from the flame. Cover and let the paneer pieces soak in all the flavours.

12. Drizzle a few drops of cream when ready to serve
